(AFP) – Confiserie délicate et très chère, aux techniques de fabrication inchangées depuis le XIXe siècle, le marron glacé, luxe des tables de Noël, ne cesse de se raffiner et de séduire.
Le marron est pelé minutieusement à la main, pour rester entier. "C'est pour ça que c'est très cher", explique Jean-David Boiron, à la tête de l'entreprise familiale de 70 salariés depuis 2003.
